"A few tips for storage:"

Cool so that it doesn't separate. A temperature of four degrees is ideal - but then the honey is hard and cannot be spread. The honey practically does not change below 15 degrees. Honey lovers who use up their honey quickly can also store it at room temperature.

However, if the honey is stored longer than 18 degrees, it can separate: a solid phase of sugar crystals then forms at the bottom and a liquid, dark layer at the top. This contains water, fructose and other components. Due to the higher water content, this phase begins to ferment faster.


Dark because light destroys the enzymes in honey. Then the honey loses its disinfecting effect, among other things. The vitamins also suffer from exposure to light.


Dry because honey attracts water and it can ferment that way. Always seal glasses or hobbocks airtight. In addition, honey can take on foreign odors through moisture.
